Sweet potatoes come from Central America. Europeans became convinced of their properties thanks to Christopher Columbus. In turn, Portuguese explorers took them to Africa and India, which today are one of the main – next to Vietnam, Japan and China – sweet potato producers. How to make sweet potato fries?
- 2 medium sweet potatoes – 850 g
- 2 flat tablespoons of corn or potato starch
- 6 tablespoons of frying oil e.g. rice
- a handful of chopped parsley
Spices: 1 flat tablespoon of dried garlic and sweet pepper, flat teaspoon of salt, half a flat teaspoon of pepper
Additionally to choose: a pinch of chili, grated Parmesan cheese
Arrange the quarters one side flat and cut them slices not wider than one centimeter. Lay the slices flat and cut long and thin fries. Let each fries be no more than 1 x 1 cm thick. Place the fries in a dish and rinse them three times with cold water. Finally, pour cold water over them and let stand for at least 30 minutes.
After this time, pour out all the water and place the potatoes cut into thin sticks on a clean and dry kitchen towel. Dry the fries very carefully.
Transfer dried fries into a wide dish. Pour six tablespoons of vegetable oil on them, which is suitable for frying / baking. Use the pliers to mix the fries with oil. Let the oil cover the entire surface of the sweet potato sticks very carefully.
Put the spice mixture together in a small bowl: Put two flat spoons of corn or potato starch and a flat spoon of dried garlic and sweet pepper, half a flat spoon of pepper. However, do not add salt to this mix.
Mix the spices and starch in a bowl and sprinkle them with oil-stick sweet potato sticks. Again, mix everything thoroughly with a pair of pliers.
Place the ready-to-roast sweet potato sticks on a wide and flat baking tray lined with baking paper. Remember to use baking parchment that is resistant to high temperatures.
It is also very important that the fries do not touch each other. This is another very important step thanks to which you will bake crispy sweet potato fries. Place a baking tray with French fries ready for baking in an oven preheated to 220 degrees. Middle shelf with top / bottom heating. The total baking time is about 25 minutes. In the middle of baking, you can carefully pull out the baking tray and turn each fries on the other side. Thanks to this they will be baked on both sides.
I recommend after about 20 minutes of baking set the option of grilling in advance, so that the fries are more toasted and become perfectly crispy. It should be remembered that the degree of French fries baking depends largely on the actual temperature in the oven and the size of the chamber. I recommend checking the baking level all the time and, if necessary, moving the baking tray one shelf lower (if you bake too quickly), or raise the baking temperature (if the fries do not blush).
